Carrot cake pancakes!
Ingredients: 60g whole wheat flour, 1 teaspoon baking powder, 1 teaspoon cinnamon, sweetener of choice, about 40g grated carrot, 100ml milk, 1 heaping tablespoon of apple sauce
1. Combine the first four ingredients in a bowl, then add the grated carrot and mix. Pour in milk and apple sauce and stir well.
2. Preheat a frying pan with oil.
3. Once the pan is preheated, lower to low/medium heat and pour a heaping tablespoon of batter into the pan. Bake the pancakes on the first side until the edge gets lightly dark which will take about 2 minutes. Then bake on the other side for 1-2 more minutes. Repeat until batter is gone.
4. Serve them with whatever you like. Fruit like apples, some kind of nut butter, nuts, shreds of coconut, crunchy granola, maple syrup, yogurt, a frosting, … :)
